Shopping list
Makes for 4 servings
4 eggs
1 red or green pepper
1 large white onion
400 g tomatoes (canned or fresh, ripe)
3 cloves of garlic
1/4 teaspoon of chilli powder
1/2 teaspoon of salt
1 teaspoon of sugar
pepper
oil
1/2 bunch of fresh parsley
A method of preparing
Cut the onion into crescents and the peppers into strips. Peel the tomatoes and dice them (unless you use canned tomatoes). In a frying pan, heat a tablespoon of olive oil, fry the onion on it, add the garlic and paprika pressed through the press, fry until tender. Add tomatoes, sugar, salt, chilli and a little pepper. Stew everything for 10-12 minutes, until the tomatoes fall apart and the sauce reduces. Make 4 indentations, insert an egg into each one, cover and leave over low heat until the eggs are ready (about 2 minutes). Sprinkle everything with chopped parsley, spread a few teaspoons of yogurt mixed with garlic on top, sprinkle with fresh pepper. Distribute into plates and serve with fresh bread.
