Penne with Mascarpone Sauce

Penne with a sauce based on creamy mascarpone cheese, with the addition of sun-dried tomatoes, fresh spinach and pieces of turkey.

Shopping list

 

ingredients:
150 g turkey breast (1/4 teaspoon salt, 1/2 teaspoon smoked or sweet pepper, 1/2 teaspoon dried garlic)
8 halves of dried tomatoes
50 g of fresh baby spinach
3 cloves of garlic
125 g of mascarpone
5-6 tablespoons of milk
40 g hard cheese, e.g. Pecorino, Parmesan (you can use another)
1/4 teaspoon of salt
1/2 teaspoon of dried parsley
1/4 teaspoon of nutmeg
130-150 g of penne pasta

To serve:
ground pepper, fresh basil

A method of preparing

Cook the pasta according to the recipe on the package. Dice the turkey, sprinkle with spices, pour 1 tablespoon of sun-dried tomato oil, mix and set aside. Squeeze the garlic through the press, cut the tomatoes into strips. Wash the spinach and tear off the thick ends from the leaves. Use a teaspoon of dried tomato oil to fry the garlic for 1 minute, then add the tomatoes and fry for another 2 minutes, move to the side of the pan. Place the turkey in the middle and sauté for 2-3 minutes. Add the mascarpone, wait for it to dissolve, then add the milk and all spices, bring to a boil. Add the spinach and grated cheese, mix everything and wait for the spinach to soften. Then add the cooked, still warm pasta and combine it thoroughly with the sauce. Serve the dish immediately, sprinkled with fresh pepper.
