Blueberry pancakes

Blueberry pancakes, plump, tasty, topped with homemade vanilla sauce.

Shopping list

 

ingredients:

2 cups of wheat flour
2 tablespoons of sugar
1 sachet of vanilla sugar
2 level teaspoons of baking powder
1/2 level teaspoon of baking soda
pinch of salt
2 cups of buttermilk (or milk mixed with 2 tablespoons of lemon juice)
2 large eggs
60 g of butter, melted and cooled
1 and 1/2 cups of blueberries

Sauce:
2 yolks
3 tablespoons of powdered sugar
1 cup of 30% cream
1/4 cup of milk
1 heaped teaspoon of potato flour
1 vanilla pod

A method of preparing

In a bowl, sift the flour with powder, soda and salt. In another bowl, beat the eggs, add the buttermilk and both sugars. Pour the wet ingredients into the dry ones and mix gently (not very thoroughly), then pour in the butter and mix again. In a hot frying pan, spread a little oil, rub it with a paper towel. Put two tablespoons of dough on each cake, followed by a handful of blueberries. Fry for about 1 minute on each side. Stack up. Serve with the vanilla sauce and the remaining (slightly crushed) blueberries.

Sauce:
Pour the cream into a saucepan. Cut the vanilla pod and scoop the seeds out of it, add to the cream. Bring it to a boil and remove from heat, remove the vanilla pod. Put the yolks into a bowl, add powdered sugar and beat, then add milk and potato flour, combine everything thoroughly with a whisk. Add the cream slowly, stirring constantly. Then pour the sauce back into the saucepan and heat until it starts to thicken. Take it off the fire. Serve warm or cold.
