THAI CURRY WITH PULPIES

Thai meatballs curry, a delicious dish in an oriental style.

Ingredients

Meatballs:

500 g of ground beef
1 egg
2 tablespoons panko or breadcrumbs
2 cloves of garlic
1 cm of fresh ginger
1 chilli pepper
1 level teaspoon of salt
pepper to taste
2 tablespoons of oil

Sauce:

2 tablespoons of red curry paste
1 can of good quality coconut milk
1/2 cm of ginger
2 cloves of garlic
pinch of salt
150 g canned bamboo canes
150 g of frozen green beans
1/2 cup of water
1 teaspoon of potato flour

To serve:

1 chilli, chopped into slices
spring onion or coriander
rice

A method of preparing

Place the minced meat in a bowl, mix it with the egg, grated ginger and garlic. Cut the pepper in half, remove the seeds and chop finely, add to the meat. Add the remaining ingredients and form not too large meatballs (about 20). Heat the oil in a saucepan and fry the balls on it, when they are browned, put them on a paper towel to drain the fat. Add curry paste, grated ginger and garlic to a saucepan, fry for a moment, pour coconut milk and bring to a boil. Put the meatballs back in the saucepan and simmer until the sauce is slightly reduced. Finally, add the bamboo shoots and the green beans and cook for 3 minutes. Mix the water with the potato flour, pour it into the curry and stir until the sauce thickens. Season everything with salt. Serve the curry with rice, chopped chilli and green onions or coriander.
